skeleton heat treatment

Hope you had yer tea a wee while ago.
Writing for a web site can be educational, but
sometimes too much so.
Apparently the challenge for fish processors
is to get as much flesh from a fish as is possible. The traditional
method is to strip the fish to the skeleton and then use a high
pressure water jet to extract the remaining flesh from the bones
of the skeleton.
The problem with this process is that it is
indiscriminate. All sorts of other organic material such as fish
shite and fish brains can get squirted in along with the good
stuff .... still with us ?
So .... what does this amazing invention, purchased
from the inventor by an Aberdeen fishery, actually do ?
Well, apparently if the skeleton is heated,
and the heated skeleton given a wee battering and then subjected
to the traditional scooosh of water, the result is that the stuff
that you don't want to eat (shit, brains etc.) stays on the bone
and all you get left with is "good, honest fish meat".
Honest .................... fish fingers will
never be the same again!!
